
CHICKEN - Grilled Chicken Fruit Salad
Makes 4 small servings. Double the recipe and you
can have it as your entrée one evening and as a light lunch the next day.
1 Maverick Ranch Chicken Breast – boneless and skinless
2 cups seedless
red grapes, halved (almost any fruit may be used:
chopped apples, pears, peaches,
etc.)
½ cup chopped celery
¼ cup chopped onion
2 T. finely chopped walnuts
Dressing:
½ cup low-fat mayo
1 T. Dijon mustard
1 T. lemon juice
Salt and pepper to taste
Grill the chicken until cooked through. Cool and cut into small cubes. Combine the chicken,
fruit, celery, onions, and walnuts. Dressing: combine
all of the ingredients and pour over the chicken mixture.
Toss to coat.
