
BUFFALO: LEANER BY NATURE
Since 1881, the Moore family has been in the sheep and cattle ranching business in the Western United States. In 1980 we purchased the world champion buffalo bull and a small herd of buffalo females to raise on our 38,000 acre Idaho ranch. We've ranched buffalo there because of its outstanding nutritional value: Maverick Ranch Natural Buffalo is nutritionally superior to most poultry and fish and is even comparable to our famous extra lean NaturaLite® Beef.
LEAN BUFFALO
Buffalo is naturally very lean. Prior to cooking, our Buffalo Ground has only 11g of fat per 4 ounce serving. It’s pure buffalo: we add no carrageenin, oatmeal or beef trim fillers often found in comparable products.
Our Natural Buffalo boasts a great steak flavor, thanks to the all-natural, 100% vegetarian diet on which the animals are raised. For most of their lives they enjoy wild-growing range grasses. They are then switched to a healthy diet of natural grains and legumes for 3 to 4 months prior to harvest. At no time are they ever fed animal proteins or byproducts of any kind. This care in feeding provides a superior taste which is not at all "gamy" or "wild." The distinctive (but mild) flavor will be popular with your family!

Maverick Ranch is extremely proud to be associated with the United States Olympic program. Each year our natural buffalo is available to 20,000+ Olympic hopefuls training there, and has been since 1998. Maverick Ranch has been the exclusive supplier of fresh beef to the U.S. Olympic Training Centers since 1987, and in 2001 began supplying fresh pork, including sausage and bacon, as well.
SANOVA: PROTECTING YOUR FAMILY
In 2002 Maverick Ranch became the first retail-oriented meat plant in the nation to install SANOVA, the newest USDA-approved system which destroys pathogenic (harmful) bacteria. The SANOVA system eliminates over 99% of these pathogens, including Listeria, Salmonella, and E.coli O157:H7, without leaving any residue or affecting taste and tenderness in any way. Unlike other antibacterial measures, SANOVA destroys the harmful bacteria and leaves the "good" bacteria that provide a line of defense against possible new introduction of harmful bacteria in the store or in your home. We do not irradiate any of our products.

Centuries ago, more than 40 million buffalo grazed the mountains and plains in vast areas of North America. By 1900 the buffalo was nearly extinct, but had provided food for the westward migration and settlement of our forefathers of the Western United States. Today, buffalo numbers are strong once more and their lean meat is again becoming quite popular as consumers become aware of this lean and healthy beef alternative. Most buffalo cows are raised for breeding stock on hundreds of ranches nationwide, while the surplus males now supply us with one of our most nutritious foods.
TRULY NATURAL
Buffalo is the TRUE Natural Meat: these animals utilize natural resources in the wild and are useful to the environment. Federal law prohibits growth promotants and added hormones to be given to buffalo and no pesticides are ever used. Due to their hardy nature, these animals are extremely resilient and resistant to disease or sickness and therefore rarely need any sort of medication.
COOKING MAVERICK RANCH NATURAL BUFFALO
Like all meats, buffalo should always be cooked properly. But be aware that since Maverick Ranch Natural Buffalo has so much less fat, our ground buffalo will reach 160˚F 15%-20% faster than regular ground beef. For your dining pleasure, please remember not to overcook Maverick Ranch Natural Buffalo Steaks, as overcooking will make them much less tender and juicy. And of course, always follow the safe handling instructions on the label.
